So, in conclusion we can say, the spell checker works fine in insider fast version 16.18. I further tested with insider fast version i.e.16.18 and I reviewed two pages of document full of spelling errors, it worked fine and as expected. Review tab, then it will correct two or three errors and then it will be greyed out again. Spelling and Grammar window once it is greyed out and reopen again by going to The spell check window will be greyed out after correcting two or three words. I tested with Word v16.17 on Mac OS Mojave and I encountered the same issue as you mentioned.
